Wine lovers in the Mid-Columbia may well remember the creative quality of chef Chris Ainsworth when he helped launch the restaurant at Tagaris. Well, a couple of years ago he left the Tri-Cities and its chain-loving residents for the Napa of the Northwest — and Walla Walla gained another gem. It's a well-known hangout for rock-star winemakers, including Gary Figgins (Leonetti), Ray Einberger (Columbia Crest) and Christophe Baron (Cayuse). My evening with the baby artichoke salad, flatbreads and wood-grilled Wagyu beef hanger steak ranks as perhaps the most imaginative and delectable dinner I've enjoyed in Eastern Washington. Chris, his charming wife, Island, and professional staff reward those who make the hour-long drive from the Tri-Cities.
A couple of sidenotes: It's a rather small restaurant and I noticed just one restroom, so patience can be required. Also, I appreciated the comment on the menu that asks guests to refrain from using their mobile phones.
